Couscous salad with grilled vegetables


Salad of couscous, red pepper, cumin, artichoke, grilled courgettes, lemon, mint and parsley.

Directions

  1. Bring the water to a boil. Put the couscous in a bowl, along with the salt, the smoked paprika and the ground cumin.
  2. Pour over the boiling water, stir once and leave for 10 minutes.
  3. Spoon the grilled artichokes with oil and all through the couscous. Let the grilled courgettes drain and cut into pieces. Add also.
  4. Let the grilled pepper strips drain, but collect the moisture. Add the pepper to the couscous and spoon over.
  5. Clean the lemon. Grate the yellow skin of the lemon over the couscous salad and press the fruit above it.
  6. Remove the leaves from the sprigs of fresh mint and finely chop them together with the sprigs of parsley.
  7. Add to the salad and scoop. Add some draining of the pepper strips to the salad for extra creaminess and taste.
