Fennel tomato salsa
A tasty Spanish recipe. The vegetarian side dish contains the following ingredients: fennel, tomatoes, garlic (stalks, finely chopped), lemon juice and freshly ground black pepper.
Cut the hard core from the fennel and cut the vegetables into very small pieces.
Slice the fennel green.
Cut the tomatoes in four, remove the seeds and cut the flesh into small cubes.
In a bowl of fennel, fennel green, tomato cubes and garlic stalks, mix together.
Season with lemon juice, salt and pepper.
Keep the salsa possibly covered in the refrigerator..
