Lamb's lettuce with smoked herring
A tasty Dutch recipe. The starter contains the following ingredients: fish, potatoes (peeled), smoked herring fillet (approx. 200 g), apple, white wine vinegar, Zaanse mustard, extra virgin olive oil, lamb's lettuce (a 75 g) and shallot (in rings).
With the melon ball scoop, stick balls out of the potatoes.
Boil the balls in plenty of water with salt in 10 minutes until al dente.
Drain and allow to cool until they are lukewarm.
Cut the herring fillet into small pieces.
Cut the unpeeled apple into quarters and remove the bell house.
Cut the apple slices into small cubes.
Mix the wine vinegar with the mustard.
Pour the oil in a thin stream while stirring to a smooth dressing.
Season with pepper.
Spread the lamb's lettuce, the potato balls, the herring, the apple and the shallot over 4 plates.
Pour the dressing over it.
Tasty with baguette..
