Oatmeal muffins with orange and ginger
Preheat the oven to 200ºC. Mix the flour in a bowl with the oatmeal, carrot, cinnamon, orange zest, ginger, sugar, baking powder and a pinch of salt.
Beat the melted butter, the orange juice, the milk and the egg and pour this over the dry ingredients. Stir quickly with a fork, but do not mix too well.
Put the cake molds in the muffin baking tin. Divide the batter and fry the muffins in the oven for about 25 minutes until tender and golden brown. Serve the oatmeal muffins hot or cold.
