Omelette with sweet and sour sauce
Omelette with Chinese stir-fry mix, ice-cream prawns and wok sauce sweet and sour served with rice.

Beat the eggs in a bowl and season with the soy sauce and pepper.

Heat the oil in a non-stick frying pan and pour 1/4 of the egg mixture into the pan.

Bake an omelet in 3 minutes. Turn halfway.

So bake 3. Keep warm on a plate under a lid.

Meanwhile, peel the ginger and cut finely.

Heat the oil in a wok, add the ginger and stir-fry 1 min.

Add the stir-fry mix and stir-fry 5 minutes.

Mix in the wok sauce and shrimp and stir fry for another 3 minutes.

Season with pepper and salt.

In the meantime, prepare the rice in the microwave according to the instructions on the packaging.

Divide the vegetables over the middle of the omelettes, roll up and cut diagonally.

Serve with the rice and any extra wok sauce.
