Directions

  1. Preheat the oven to 175 ° C. Puree the thyme and the garlic in the food processor, add the bread and grind to a crumb. Add 2 tbsp mustard and let the machine run for a while until the crumbles stick together.
  2. Sprinkle the meat around with salt and pepper. Heat the oil in a frying pan, frying the meat on high heat around golden brown. Place the meat in the roasting tray, brush the top of the meat with the rest of the mustard. Spread the mustard crumb over the meat and lightly press the meat until the layer is just as thick everywhere.
  3. Place the roasting pan on the grid in the middle of the oven and roast the pork fillet for 25 minutes. Turn the oven off and the door a little crack. Leave the meat in the oven for another 15 minutes, so that the juices can completely spread through the meat.
  4. Cut the meat into slices with a sharp knife. Tasty with roasted pumpkin and a salad.
