Roasted fennel with pancetta and pine nuts

Preheat the oven to 220ºC.

Halve the fennel tubers in the length and cut these halves back into parts. Put them on a baking sheet and pour the oil over them. Scoop well and season with some pepper.

Spoon the pieces of pancetta and garlic through the fennel. Slide the baking tray high in the oven and grill for about 10 minutes.

Remove the baking sheet from the oven and scoop everything. Sprinkle with the pine nuts and roast for another 10 minutes in the middle of the oven.
