Cut off the peel from the grapefruits and cut the wedges between the membranes. Collect the juice.

Heat the oil and fry the almonds on both sides until golden brown. Remove from the pan and sprinkle with salt and pepper.

Mix all the ingredients for the dressing and season with salt and pepper.

Hash the dressing through the lettuce leaves and spread over 4 plates. Divide the grapefruit, the cheese and the nuts over the lettuce. Serve immediately.
