Salmon with cauliflower puree, snow peas, haricots verts and garden peas.

Directions

  1. Cut the garlic into slices and divide the cauliflower into small florets.
  2. Let the cream with the garlic and the bay leaf gently reduce to two thirds for 6 minutes.
  3. Meanwhile, cook the cauliflower florets in water with salt for 5 minutes.
  4. Remove the bay leaf from the pan and puree the cauliflower with the whipped cream and the garlic. Season with salt and pepper.
  5. Bring a pot of water with a little salt to the boil. Cook the snow peas for 2 minutes and let them drain.
  6. Remove the stalk of the haricots verts, let the tip sit, and boil them in the same water for 4 min. Drain them.
  7. Finally, cook the garden peas 1 min.
  8. Brush the salmon with the oil and sprinkle with salt and pepper. Fry in a dry frying pan in 6 min. Just done, turn halfway.
  9. Heat the cauliflower puree in a pan.
  10. Heat the beans in the butter and season with salt and pepper.
  11. Divide the vegetables over the plates, lay the salmon and serve the cauliflower puree.
