Roast the hazelnuts in a dry hot frying pan. Add 15 grams of sugar and let it caramelise. Let the nuts cool down on a plate and sprinkle some sugar over it.

Mix the egg yolks, 70 grams of sugar and cornstarch to a white mass. Heat the mixture to a low setting. Add the milk for a dash of drizzle, continue to beat and bring to the boil.

Beat the whipped cream with the remaining sugar. Fill 6 ovenproof dishes with the nuts custard and scoop some whipped cream on each dish.

Place the dishes in the middle of the oven for 4 minutes. Garnish with pieces of nut and possibly a little cinnamon powder.
