Roast the hazelnuts in a dry hot frying pan. Add 15 grams of sugar and let it caramelise. Let the nuts cool down on a plate and sprinkle some sugar over it.

Preheat the oven to 200 ° C. Hold 1 tablespoon of chopped nuts separately for the garnish. Mix the rest of the chopped nuts with the raisins and coconut.

Break the caramelised nuts into pieces and add them to the mixture.

Mix the egg yolks, 70 grams of sugar and cornstarch to a white mass. Heat the mixture to a low setting. Add the milk for a dash of drizzle, continue to beat and bring to the boil.

The custard is good when a thin layer is left on the convex side of the spoon. Remove the pan from the heat source and stir the nut mixture through the custard.

Beat the whipped cream with the remaining sugar. Fill 6 ovenproof dishes with the nuts custard and scoop some whipped cream on each dish.

Place the dishes in the middle of the oven for 4 minutes. Garnish with pieces of nut and possibly a little cinnamon powder.
