Directions

  1. Mix the butter with the flour manually or with a food processor quickly into a crumbly dough.
  2. Add the egg, salt and ice cold water and mix to a cohesive mass (1 tsp salt and 1 tbsp ice cold water per 8 people).
  3. Make a dough from the dough, wrap it in cling film and leave it in the fridge for more than 1 hour.
  4. Spread the kitchen top with flour and roll the dough out evenly into a piece of 30 cm. section.
  5. Line the quiche mold with the dough. Press the dough well against the edge of the mold.
  6. Cut off the excess dough at the edges. Prick holes in the soil with a fork.

  9. Grate the Gruyere cheese.
  10. In a bowl, mix the rest of the eggs with the milk, crème fraîche and cheese and add pepper and salt to taste.
  11. Spread the bacon over the dough and pour the egg mixture over it. Bake the quiche for about 45 minutes in the middle of the hot oven until golden brown.
