Pumpkin with penne


A tasty Italian recipe. The vegetarian main course contains the following ingredients: pumpkin (600 g), olive oil, onion (coarsely chopped), tomato cubes (400 g), leeks (in rings), dried Italian herbs, wholemeal penne (pasta, bag 500 g, organic) and cream (light (a 250 ml)).

Directions

  1. Cut the pumpkin into pieces.
  2. Remove the seeds and the stringy inside.
  3. Peel the parts.
  4. Cut the pumpkin into 2 cm pieces.
  5. Heat the oil in a frying pan and fry the onion for 3 minutes.
  6. Add the pumpkin and stir-fry 5 minutes.
  7. Add the tomato cubes, leeks, herbs and 200 ml water, put the lid on the pan and bring to the boil.
  8. Turn down the heat and simmer for 15 minutes or until the pumpkin is tender.
  9. Scoop occasionally.
  10. Cook the penne al dente according to the instructions on the package.
  11. Add the cooking cream to the pumpkin and bring the dish to the boil while stirring.
  12. Season with salt and pepper.
  13. Drain the penne and mix through the pumpkin..
