Basic recipe soffritto
Peel and chop the onions.
Cut the winter roots into small cubes.
Remove any threads from the celery and cut the celery into small cubes.
Heat the olive oil and fry the onion, carrot and celery for 15-20 minutes at a low setting until the vegetables are glassy, but not colored.
Use the soffritto as the basis for an Italian dish.
