Halve the pears and remove the core.

Put them in a pan and add the white wine, the cinnamon, the sugar, the lemon juice and the vanilla pod.

Bring to the boil and let the pears stand for 10 minutes.

Remove them from the moisture and let them drain.

Cut them into slices or make a fan by not cutting the slices completely apart.

Place the glass chocolate bavarois on 6 saucers and place the pear fans next to it.

Crumble the hazelnuts and sprinkle over the pears.
