Berliner cheese souffle
A tasty recipe. The starter contains the following ingredients: meat, Passendaler cheese (piece), fresh chives (à 20 g), fresh chervil (à 15 g), soft butter or margarine, eggs (at room temperature), flour, baking powder, ham cubes (duobakje) 250 g), mustard, (freshly ground) pepper, salt and butter or margarine to grease.

Ingredients
- 150 g Passendaler cheese piece
- Bag fresh chives à 20 g
- Bag fresh chervil à 15 g
- 125 g soft butter or margarine
- 3 Eggs at room temperature
- 100 g flour
- 1 bag baking powder
- 1 tray ham cubes approx. 250 g
- 1,5 tablespoon mustard
- (freshly ground) pepper
- Salt
- Tablespoon butter or margarine to grease

Preheat oven to 175 ° C or gas oven 3. Cut cheese crust and cut cheese into small cubes. Cut the chives and chervil finely. Place baking paper in cake tin and grease sides. In bowl of butter with mixer lightly and frothy beating. Stir in eggs one at a time. Add flour and baking powder and beat it. Stir in cheese, ham, mustard and herbs. Season with pepper and little salt. Make the batter in a cake tin and let the oven soufflé rise in approx. 30 minutes and bake until golden brown. Loosen souffle along edges. Place dish on shape, turn it together and let soufflé slide out of shape. Remove baking paper. Cut the soufflé into slices and place on four plates. Serve with coarse farmhouse bread.
