Butter soda with watercress


A tasty recipe. The starter contains the following ingredients: poultry, potatoes (crumbled, peeled), butter, onion (chopped), butterhead lettuce (100 g), watercress (75 g), chicken broth (from tablet), Ardenner kiprollade ((meat products) and in thin strips).

Directions

  1. Cut the potatoes into small cubes.
  2. Melt the butter in a soup pan and fry the onion very gently until it looks glassy.
  3. Scoop the potato cubes through and heat for another 2-3 minutes on a very low heat.
  4. Scoop the butterhead lettuce through the potato onion mixture.
  5. Put the watercress through, but keep 4 nice twigs apart.
  6. Let the lettuce and watercress shrink in time.
  7. Grind a little pepper over the pan and pour in the stock.
  8. Bring to the boil while stirring and let the soup simmer for 5 minutes.
  9. Purée the soup with a hand blender or in a blender or food processor.
  10. Warm the tied soup for a short while and season to taste with salt and pepper.
  11. Spoon the lettuce soup into four warm deep plates and place a small piece of strips of chicken roulade in the middle.
  12. Garnish with the sprigs of watercress..
