Directions

  1. Preheat the oven to 220ºC.
  2. Remove the roots and leave a little green.
  3. Melt the butter and simmer the carrots for 3-4 minutes.
  4. Stir in the sugar and cook gently until the carrots are lightly caramelized.
  5. Put them side by side in a low oven dish and put in the oven for 5-6 minutes.
  6. Heat the broth, pour over the roots and sprinkle with the coriander powder.
  7. Cook for about 8 minutes in the oven until the stock has evaporated and the carrots shine.
  8. In the meantime, cut strings of the lime zest and squeeze out the fruit.
  9. Divide the lime zest and the juice over the roots.
