Preheat the oven to 220ºC.

Remove the roots and leave a little green.

Melt the butter and simmer the carrots for 3-4 minutes.

Stir in the sugar and cook gently until the carrots are lightly caramelized.

Put them side by side in a low oven dish and put in the oven for 5-6 minutes.

Heat the broth, pour over the roots and sprinkle with the coriander powder.

Cook for about 8 minutes in the oven until the stock has evaporated and the carrots shine.

In the meantime, cut strings of the lime zest and squeeze out the fruit.
