Celeriac soup with chicken
A tasty Dutch recipe. The main course contains the following ingredients: poultry, olive oil, onion (chopped), celeriac (preserved in cubes and green), chicken broth (from tablet), chicken breasts (about 350 g), whipped cream, (casino) bread (brown), cheese spread and nutmeg (freshly grated).

Heat the oil in a soup pot and fry the onion.

Bake the celeriac for 5 minutes without coloring it.

Pour the stock into the pan, add the chicken breasts and bring the stock to the boil.

Boil the chicken breasts gently in about 15 minutes.

Remove the chicken fillet from the pan and puree the soup with the hand blender.

Divide the chicken fillet into pieces with a fork and add the chicken to the soup again.

Pour the whipped cream into the pan and season the soup with salt and pepper.

Heat the soup for another 5 minutes without letting it boil.

Spread 4 slices of bread with the cheese spread and cover them with the other 4 slices.

Bake the sandwiches in the sandwich maker golden brown and cut them diagonally.

Spoon the celeriac soup into 4 bowls, sprinkle with a pinch of (freshly grated) nutmeg and garnish with the celeriac green.
