Directions

  1. Cut the fish into slices of 1/2 cm and place them in a shallow dish.
  2. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife.
  3. Squeeze out the lime. Cut the pepper into thin strips and add to the lime juice.
  4. Grate the ginger above and stir in the sugar and salt. Hold 2 tbsp of the marinade and pour the rest over the fish.
  5. Cover and leave to marinate in the refrigerator for at least 2 hours. The fish is now white in color and no longer raw.
  6. Pick the petals coriander. Divide the slices of fish over 4 plates. Pour over the rest of the marinade and sprinkle with the coriander leaves.
