Cut the fish into slices of 1/2 cm and place them in a shallow dish.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife.

Squeeze out the lime. Cut the pepper into thin strips and add to the lime juice.

Grate the ginger above and stir in the sugar and salt. Hold 2 tbsp of the marinade and pour the rest over the fish.

Cover and leave to marinate in the refrigerator for at least 2 hours. The fish is now white in color and no longer raw.

Pick the petals coriander. Divide the slices of fish over 4 plates. Pour over the rest of the marinade and sprinkle with the coriander leaves.
