Directions

  1. Beat a smooth batter of flour, baking powder, buttermilk and a pinch of salt.
  2. Beat the eggs through.
  3. Let the batter rest for a few minutes and whisk in the grated cheese.
  4. Meanwhile, mix the strawberries with the shredded pieces and keep separate.
  5. Heat a little butter in a frying pan and bake golden brown pancakes from the batter.
  6. Bake about 8 pancakes and keep them warm in the oven (60ºC).
  7. Serve the pancakes with a spoon of strawberry-ginger compote.
