Beat a smooth batter of flour, baking powder, buttermilk and a pinch of salt.

Beat the eggs through.

Let the batter rest for a few minutes and whisk in the grated cheese.

Meanwhile, mix the strawberries with the shredded pieces and keep separate.

Heat a little butter in a frying pan and bake golden brown pancakes from the batter.

Bake about 8 pancakes and keep them warm in the oven (60ºC).

Serve the pancakes with a spoon of strawberry-ginger compote.
