Cherry pie with vanilla crumble
A tasty american recipe. The dessert contains the following ingredients: flour (extra to dust), powdered sugar, cold butter (diced), whipped cream (125 ml cup), cherries (a 250 g frozen), white caster sugar, cornstarch, vanilla pod (sachet 1.5 g) and self-rising flour.

Mix the flour, powdered sugar and 150 g butter in the food processor into a crumbly mixture. Let the machine run and add the whipped cream. Mix into a cohesive dough. Wrap in cling film and put in the refrigerator for 1 hour.

Preheat the oven to 180 ºC. Sprinkle the worktop and the rolling pin with flour and roll out the dough into a round piece with a diameter of 35 cm. Line the baking dish with it. Prick holes in the bottom with a fork, cover with baking paper and fill with the backing. Bake for 15 minutes in the oven (blind baking). Remove the baking paper with the filling and bake for approx. 5 min. Leave the oven on.

Meanwhile, cook the cherries in a saucepan and 100 g of soft caster sugar for 15 minutes. Stir in the cornstarch and remove from the heat.

Cut the vanilla pod lengthwise and scrape out the marrow with a sharp knife. Grind with the self-raising flour, the rest of the butter and the rest of the sugar in the food processor in 15 sec. to crumbs.

Spread the cherry mixture over the bottom and spread the dough crumbs over it. Bake for about 25 minutes in the middle of the oven. Serve warm or lukewarm.
