Sprinkle the pork chops with salt and pepper and rub them well with olive oil.

Grate half of the orange peel. Cut the rest of the orange into slices.

Heat a grill or frying pan and roast the pork chops 3-4 minutes per side. Heat the oven grill.

Mix the orange zest with the mustard and brush one side of the meat with it. Sprinkle with thyme and caster sugar.

Place the pork chops with the orange slices on a baking sheet for 3-4 minutes not too close to the oven grill.
