Cod with leek and apricots

Well the apricots in hot water. Heat the olive oil in a wok or frying pan and stir fry the leek, onion and garlic 3-4 minutes.

Cut the apricots slightly smaller. Spoon half of it with the tomato cubes through the pre-mix.

Sprinkle the fish with salt, pepper and paprika powder. Put the cod on the vegetable mixture and spread the rest of the apricots over it. Cover with aluminum foil or a lid and simmer for 4-5 minutes.

In the meantime, prepare the couscous according to the instructions on the packaging. Serve the cod with the couscous.
