Cook the quinoa according to the description on the packaging, pour thoroughly and let it evaporate well.

Bring a pot of water to the boil and immerse the tomatoes for 5 seconds (keep the water).

Remove the skin from the tomato and cut into pieces.

Cut the broccoli into very small pieces and put them in the boiling water and cook for 3 minutes.

Then rinse it cold.

Slice the spring onions fine.

Chop the garlic finely and also finely chop the parsley and the fresh mint.

Cut the radishes into slices.
-
Cut the cucumber lengthwise into quarters, remove the seeds and cut the cucumber into small cubes.

Mix with the tomato, broccoli, spring onion, garlic and herbs and finally the quinoa.

Season with lemon juice, oil and salt.

Put at least 1 hour in the refrigerator to mix the flavors.

Serve on salad leaves, garnished with cress and slices of radish.
