Bring 1 liter of water to the boil with the sugar, ginger root and tea.

Turn the heat source off, let it draw for fifteen minutes and strain the tea. Stir in lemon juice and grate to taste.

Pour the mixture into a freezer and let it freeze in about 4 hours.

If ice crystals form on the edges after an hour, stir the mixture with a fork.

Do this a few more times until everything is frozen.
