Split the eggs, put the proteins in a fat-free bowl. You do not use the egg yolks. Add the berry juice and the sugar to the protein.

Beat the whole with a mixer until all the sugar has dissolved and the proteins are completely stiff.

The protein must be so stiff that the bowl can be turned upside down without foam.

Divide the Hague bluff over the glasses and serve the long fingers.
