Ingredients
- 375 gram triomix mixed mushrooms
- 75 gram smoked bacon
- 6 sun dried tomato
- 1 tablespoon sherry
- Chopped flat parsley
- 3 tablespoon creme fraiche
- 60 gram flour
- 250 milliliters Full Milk
- 1 teaspoon salt
- 2 tablespoon cognac possibly
- 3 egg
- 3 tablespoon melted butter
- 2 tablespoon fresh herbs eg parsley, chervil, tarragon, thyme, chives
- Oil for baking

Directions

Brush or wipe the mushrooms clean and cut into slices.

Cut the bacon and the sun-dried to strips.

Fry the bacon, add the mushrooms and tomato.

Bake briefly on high heat.

Add the sherry, herbs and crème fraîche.

Mix flour with salt in a bowl.

Make a well in the flour and break the eggs.

Pour the milk and mix well with a mixer.

Add cognac and finely chopped fresh herbs and finally the melted butter.

Grease a frying pan with oil and fry thin pancakes. Fill the pancakes with the ragout.
