Halve the melon, remove the seeds and peel the melon. Cut the halves each into 6 parts.

Slice the leaves of the sprigs of fresh mint and finely chop the chives.

Stir in a bowl the honey, vinegar, oil, pepper, pipeless and fresh mint (keep some behind for garnishing) to dressing. Season to taste with salt.

Cut the ham into broad strips. Divide the lettuce over plates. Put the melon parts on top and sprinkle the dressing over it.

Divide the ham over it and garnish with the rest of the coin.
