Wipe the mushrooms clean and put four to five mushrooms on each skewer.

Heat the oil in the frying pan and place the skewers in it.

Bake the skewers around light brown.

Meanwhile stir in a bowl of sherry, soy sauce and honey into a sauce.

Pour this over the skewers and preheat the skewers over a high heat until they are all wrapped in a shiny, spicy syrup.

Turn the skewers regularly and let the moisture evaporate.

Place three skewers on each plate and sprinkle the sesame seeds and coriander over them.
