Leek-potato soup with smoked sausage
A tasty Dutch recipe. The main course contains the following ingredients: meat, olive oil, leeks (in rings), garlic (finely chopped), potatoes (solid, peeled), thyme (15 g), beef (broth (350 ml)), beef smoked sausage ((250 g)) , in slices), chickpeas ((200 g) and drained).

Heat the oil in a soup pan and fry the leek and garlic for 3 minutes. Cut the potatoes into cubes, add 1/2 of the leaves of thyme and cook for 5 minutes. Add the stock and 1 1/2 liter of water. Bring to the boil and cook on low heat for 15 minutes. Purée from the heat with the hand blender to a smooth soup. Season with salt and pepper.

Add the sausage and the chickpeas and heat for 3 minutes. Divide the soup over 4 bowls and garnish with a sprig of thyme. Nice with rustique (bread) that has been warmed up in the oven.
