Homemade soft drink with lemon and ginger.

Grate the ginger with skin and all fine. Put in the sealable pot together with the sugar and water.

Shake well together and loosen the lid again. Allow this 'ginger starter' to ferment for 7 days at room temperature.

Shake the jar well in the morning and in the evening, after properly tightening the lid.

Afterwards, the mix will smell and pleasantly smell. The ginger starter is then ready.

Grate the ginger. Grate the yellow skin of the lemons and press the fruits.

Put the water together with the lemon zest, ginger grater, salt and the sugar in a pan and bring to a boil.

Remove from the heat when the sugar is dissolved and allow to cool completely.

Add the ginger starter and the lemon juice and sieve the whole through a fine sieve. Pour (possibly with the help of a funnel) into the PET bottle.

Make sure you have about 3 cm of air left in the bottle. Seal with the cap and allow to ferment for 2 to 3 days at room temperature.

The drink is ready when you can hardly squeeze the bottle. Store in the refrigerator for up to 7 days.
