Remove the outer leaves from the crop, wash and dry them carefully and store them for a salad.

Wash eight of the inner smaller leaves in ice-cold water and dry them carefully.

Boil the peas in salted water for about 5 minutes and then cool them under cold running water.

Drain well and mix with the egg salad. Season with salt and pepper.

Put a slice of ham on each leaf, a little egg salad and finely chopped chives.

Roll up the lettuce and stick with a stick. Put the rolls on a scale. Garnish with the rest of the chives.
