Heat the sugar, cream and butter in a saucepan until the mixture starts to bubble and the sugar melts.

Cook while stirring for about 15 minutes until the mixture has a butter color.

Make a mallet of parchment paper and pour in the sugar cream. Let this dry for 30 minutes.

Use a sharp knife to cut elongated triangles (mitres) from the fondant. Continue to dry until the fondant is hard.

Decorate the mitres with a red enamel pen.
