Heat the sugar with 100 ml water to a syrup.

Peel the mangoes and puree them together with the sugar syrup.

Add the Prosecco and fresh mint and pour the mass into a shallow freezer bowl.

Put it in the freezer and let it freeze for about 2.5 hours. Stir in for half an hour (this can all be done a day in advance).

Preheat the oven to 200 ° C. For the waffles, mix the flour with the butter and a pinch of salt.

Spread this batter on the baking sheet into circles and bake them in the oven for about 10 minutes.
