Put the pears down with the cut surface. Cut into thin slices, but leave the slices together on one side. Press the slices so that they open up like a fan.

Meanwhile, boil the wine in until 100 ml syrup. Pour through a sieve and allow to cool. Put 4 plates for 15 minutes in the freezer.

Put a pear variety on each plate. Remove the semifreddo from the freezer and deposit on a shelf. Cut 8 triangles from it. Put on the plate with the pear fan and drip with the wine syrup.

Sprinkle with almonds and garnish with orange peel and mint leaves.
