Directions

  1. Put the pears down with the cut surface. Cut into thin slices, but leave the slices together on one side. Press the slices so that they open up like a fan.
  2. Meanwhile, boil the wine in until 100 ml syrup. Pour through a sieve and allow to cool. Put 4 plates for 15 minutes in the freezer.
  3. Put a pear variety on each plate. Remove the semifreddo from the freezer and deposit on a shelf. Cut 8 triangles from it. Put on the plate with the pear fan and drip with the wine syrup.
  4. Sprinkle with almonds and garnish with orange peel and mint leaves.
