Directions

  1. Cut the onion into rings and cut all peppers in half. Remove the seeds and cut the flesh into cubes.
  2. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the flesh into thin strips.
  3. Heat the oil in a frying pan and fry the onion in 5 minutes on a high heat until golden brown. Add the red pepper with the paprika and cook for 3 minutes.
  4. Add the tomato cubes and simmer for 10 minutes on low heat with the lid on the pan. Season with pepper.
  5. Meanwhile, bring the water to the boil. Put the couscous in a large bowl and pour the boiling water over it. Stir through and leave for 10 minutes.
  6. Wash and halve the tomatoes and add them to the paprika tomato sauce.
  7. Spoon and make a well in the sauce with the convex side of a spoon per person.
  8. Break an egg above each well. Put the lid on the pan and let the eggs cook for a minimum of 5 minutes or until the egg has solidified as desired.
  9. Serve with the couscous.
