Pineapple mocktail with ginger ale
You make sugar water by heating equal parts of water and sugar in a pan until the sugar is dissolved. Allow the sugar water to cool, pour into a bottle and put in the refrigerator.
Blend the fresh pineapple with a hand blender into a smooth puree. Pour the puree into a long drink glass. Put the ice cubes in a tea towel, beat them small and spread over the glasses.
Pour the sugar water over the mocktails. Pour the lime juice into both glasses and pour the rest of the glass full of ginger ale. Beware, it's going to roar so pour quietly. Stir well and finish with a sprig of mint.
