Bring the stock with the onion, celery and parsley to the boil. Put the salmon fillet in the pan poach about 7 minutes.

Keep 4 nice tufts of dill apart and chop the rest of the leaves. Stir in the mayonnaise with the dill and the lemon juice.

Carefully remove the fish from the pan and serve with the mayonnaise.
