Roasted chicken skewer with lime and coriander

Grate 1 teaspoon of the lime zest and press the fruit.

Mix lime zest and juice with olive oil, brown caster sugar, finely chopped ginger root, coarse mustard, fresh coriander, salt and pepper.

Put the chicken fillet through and marinate for about 5 minutes. Put wooden skewers first in water to prevent burning. Thread the chicken on skewers and grill for 2-3 minutes in the middle of a hot barbecue.

Turn the skewers regularly and grill them for 5 minutes on the side of the barbecue. Serve with Remia BBQ sauce Sweet Dalton or Big Chief.
