Try these scallops with aromatic tomato salsa by René Pluijm
Cut the beef tomatoes in half and remove the seeds. Cut the tomatoes with the peppers into small cubes and the spring onions in rings.
Remove the red pepper from the seeds and cut it very fine. Finely chop the herbs and put everything in a bowl. Squeeze the limes above the bowl. Finally add the olive oil and brown sugar and season with salt and pepper.
Grill the scallops on the gourmet plate or grill pan for three minutes on each side and serve with the salsa.
