Roast the pine nuts in a dry hot frying pan.

Divide the arugula over 4 plates.

Drizzle the wedges of avocado with 2 tablespoons of lemon juice. Place them with the melon and goat cheese on the rocket.

Puree for the dressing the tomatoes with the ginger, 2 tbsp lemon juice, salt and pepper. Pour the olive oil in a stream.

Drizzle the salad with the dressing and sprinkle with the pine nuts.
