Cod with pancetta and cheese
A tasty recipe. The starter contains the following ingredients: fish, pancetta (Italian bacon 80 g), butter, garlic (finely chopped), shallot (chopped), white bread (toasted), lemon (cleaned), Parmesan cheese (grated), cod, lamb's lettuce (75 g) and olive oil.

Preheat the oven to 180 ºC. Heat a frying pan without oil or butter and fry the pancetta in 5 min. Until crispy. Turn halfway. Remove from the pan and drain on kitchen paper. Melt the butter in the remaining shortening, add the garlic and shallot and cook for 5 minutes on low heat.

Meanwhile, crumble the bread, add and bake for 2 minutes. Grate the yellow skin of the lemon and squeeze out the fruit. Add the grater to the crumb and fry the whole in 5 min. Golden brown and crispy. Crumble the pancetta and scoop together with the cheese through the bread mixture.

Cut the cod into 4 equal pieces and place in the oven dishes. Spread the pancetta bread mixture over the fish and bake in the oven for about 15 minutes.

Meanwhile, put the lamb's lettuce in a bowl. Mix the lettuce with 2 tbsp lemon juice, the oil and pepper and salt. Divide over 4 plates. Put a bowl of fish on each plate. Delicious with focaccia with rosemary and garlic.
