Directions

  1. Heat the oil in a soup pan and fry the ginger, onion, red pepper and garlic for 2-3 minutes.
  2. Pour in the stock and coconut milk and bring to the boil.
  3. Spoon the celery and snow peas and cook gently for 3-4 minutes.
  4. Divide the chicken strips over bowls or plates. Spoon the soup and sprinkle with basil.
