Melt the butter and add the flour. Stir well and gradually add the milk or milk fish stock until a thick sauce is formed.

Remove the pan from the heat source and stir in 1 egg yolk and 50 grams of grated cheese or emmental cheese. Add 200 grams of Dutch shrimp, salt and pepper.

Allow the ragout to cool and stiffen in the refrigerator.

Divide the filling into 10-12 portions and form into croquettes.

Roll them first through flour, then through 3 beaten egg whites and finally through breadcrumbs.

Fry with 4 pieces at 180ºC simultaneously in 4-5 minutes until golden brown.

Tasty with fried parsley and lemon.
