Season the salmon with sea salt, freshly ground pepper, freshly chopped dill, lemon zest and juice and a few drops of extra virgin olive oil.

Put this in small amuse glasses and put in the fridge for a few hours to taste.

Beat the sour cream with some finely chopped dill, salt and pepper and pour a spoonful of sour cream on each glass just before serving. Serve with a small spoon.
