Heat the milk until lukewarm. Mix with the lukewarm water and the yeast in a bowl. Let stand for 10 minutes.

Add the flour, butter, sugar and salt. Knead everything in 5 to 7 minutes by hand until smooth, even dough.

Add flour if the dough is too sticky.

Take the dough out of the bowl. Brush the bowl with the oil and put the dough back.

Cover with cling film and let rise in a warm place for 1 hour or until the dough has doubled in quantity.

After proofing, preheat the oven to 230 ° C.

Sprinkle the worktop with flour. Make a roll of the dough and divide into 8 portions.

Brush your hands with a little oil (to make rolling easier) and roll out each portion to approx. 50 cm.

Fold the dough rolls into a pretzel or heart shape. Brush the ends of the dough with water and press well.

Bring a large pan to the boil with the water. Add the baking soda. Cook the pretzels one by one for 30 seconds. Turn halfway.

Carefully remove the pretzels with a slotted spoon.

Place the pretzels on a griddle covered with parchment paper and fry in brown for between 12 and 14 minutes.

Remove the pretzels from the oven, brush them with the soft butter and sprinkle with the sea salt.
