Directions

  1. Cook the spelled according to the instructions on the package. Drain and put into a bowl.
  2. In the meantime, cut the aubergine into small cubes and chop the onion.
  3. Heat the oil in a frying pan and fry eggplant and onion on high heat 8 min.
  4. Add the tomato paste, za'atar and the salt and cook for 5 minutes on medium heat. Mix through the spelled.
  5. Grate the yellow skin of the lemon over the spelled salad and squeeze out the fruit. Add 3 tbsp lemon juice.
  6. Heat the grill pan. Cut the halloumi into slices of ½ cm thick. Grill the slices of cheese 3 minutes. Turn halfway.
  7. Put the grilled cheese on the spelled and sprinkle the salad with the pomegranate seeds.
  8. Cut coriander coarse, sprinkle over the salad and serve.
