Directions

  1. Preheat the oven to 200C.
  2. Mix 4 tablespoons of olive oil with salt, pepper and cajun spices and brush the chicken breasts with this mixture.
  3. Clean the potatoes with skin.
  4. Prick the peel here and there and poke the potatoes in about 6 minutes just undercooked in the microwave at 800 Watt.
  5. Then cut them in four.
  6. Place the chicken breasts side by side on a baking tray and roast them until golden brown and cooked in about 12-15 minutes.
  7. Over the last 5 minutes, add the potato parts, sprinkled with 2 tablespoons of olive oil to which rosemary is added.
  8. In the meantime stir fry the spinach in the rest of the olive oil to which the garlic is added.
  9. Add salt and pepper to taste. Serve the spinach with the roasted chicken and potatoes.
