Broccoli curry with lentils and egg

Cook the broccoli and snow peas for 3-4 minutes. Drain them, rinse cold water and drain.

Heat the oil in a wok or frying pan and fry the onion 2-3 minutes. Add the curry paste and fry for 1 minute.

Pour in the coconut milk and broth and heat to the boil. Add the broccoli and snow peas and gently simmer for 3-4 minutes.

Drain the lentils, add to the curry and warm for 2 minutes. Divide the curry over bowls.

Peel the eggs, cut into quarters and place them on the curry. Sprinkle with the basil or coriander. Tasty with flat bread.
