Smother the peppers and red pepper with chopped garlic for 10 minutes in the olive oil.

Add the chicken broth and cook gently for 5 minutes.

Puree to a sauce and mix in the fresh coriander and 2 tablespoons of lemon juice.

Serve the sauce hot or cold with roasted meat, chicken or fish.
